Berry Muffins

Muffins
———————-
2 cups : self-raising flour
1/2 tsp : bicarbonate of soda
2 tsp : ground cinnamon
150g : brown sugar
325g : frozen berries (chopped)
120g : butter (melted)
2 : eggs
180ml : milk

Topping
————————–
1/4 cup : plain flour
1/4 cup : packed brown sugar
1/2 tsp : ground cinnamon
2 tbsp : cold butter

Preheat oven to 200C. Sift 2 cups (300g) self-raising flour, 1/2 tsp bicarbonate of soda and 2 tsp ground cinnamon into a bowl.

Stir in 150g brown sugar and whisk 120g butter (melted), 2 egg and 180ml milk in a separate bowl until smooth.

Combine butter mixture with flour and add chopped frozen berries and use a large metal spoon to stir until just combined. Spoon into muffin pans (lightly greased or use muffin cases)

For topping combine plain flour, brown sugar, and cinnamon. Add chopped butter and press into flour with fork until it looks crumbly. Sprinkle over muffins.

Bake for 25-30 minutes or until a skewer inserted in the centre comes out clean. Set aside for 3-5 minutes, then cool on a wire rack.

It makes 12 muffins.

This recipe is a combination of these two recipes.



one year later

We got the keys to our new house on Xmas Eve 2010 and we also added to our family by getting a dog, Ludo, a german short haired pointer.

We’ve been in our new house for over half a year now. It’s nice to be able to do whatever we want but I do miss living near the city. The longer we are here the more I realize that I am a city girl.

Ludo has been loads of fun but there are days I could strangle him. He’s eaten and destroyed rugs, books, magazines, and candles. And every time we come home from work we come home to this.

I am looking forward to when he is over the puppy stage but since he is only 10 months old, apparently we still have a year to go. Yikes!

mex food

I dont know what it is but I have been craving Mexican food.

On Sunday I spent half the day slaving in the kitchen. I grilled long capsicum peppers and put them in a plastic bag to refrigerate for later use. I made Mole with already made sauce ( I would not even know where to start if I had to make it from scratch) but unlike my mother I actually attempted to separate the chicken meat from the bone. I even used the left over chicken stock to make proper spanish rice. I also cooked beans to make refried beans.
For dinner that day we had mole, spanish rice, and refried beans. Yummy.

Tonight I made use of the grilled capsicum peppers. I removed the skin and seeds. I stuffed them with cheese. Rolled them in flour, dipped them in beaten egg, and fried them in oil until they got golden brown. I fried more beans and warmed up the left over spanish rice.
For dinner we had chile rellenos, spanish rice, and refried beans. Yum!

Lucky for me the hubby ate it all but I guess he doesnt know any better! haha :)

Ok so today is my Birthday. I turn 34.

April 29 is the 119th day of the year. I was born on a Thursday at 12:45AM

There are plenty of famous birthdays on the same day but not very interesting ones on the same year as me. -
Jay Orpin – Swedish song writer and producer of mostly Emo music. Not exactly famous but still something, right, and he’s from Sweden so it must count for something. :D

There was an annual solar eclipse on April 29, 1976.

The number 1 hit was Disco Lady by Johnnie Walker.

moo (money order office)

Yesterday we went to MOO (Money Order Office) Restaurant.

I have linked it but I warn you when I tried to open the page I couldnt but it could well be that its due to our shitty ISP.

firstly the location is great. its in a basement of the old money order office so it reminded me of some of the cafes in stockholm but obviously this is not nearly as old. it has a mix of old and modern decor. i like the lighting, it is more on the darker side, it suited the feel they are going for.

Last time I went to moo it was before 2005. i seemed to remember they had an excellent selection of wine. I seemed to remember correctly. They also have James Squire amber ale on tap so the husband was happy as its one of his many favorites.

I had the 150g wagyu sirloin with beef pie, beef tartar, and escargot. the sirloin was delish. it was the first time i’ve had tartar and i thought the raw meat went perfect with the flavors of the capers. It was also my first ever escargot!! and i have admit that i was disappointed and gutted that it was not in paris that i had my very first escargot. non the less i didnt mind it at all. it wasnt tough and it tasted like butter and caramel but maybe that had to do with the sauce it came in. still – i should have had some in paris!! oh well!

i had a salad on the side with baked pears, rocket, gorgonzola cheese, and walnuts. i thought it all went well together. the husband didnt like it as much but he thoroughly enjoyed the venison.

its moderately priced but its priced properly for what you get. i totally recommend moo but make sure you make a reservation. we were kind of given the look when we asked for a table even though it was not packed.



mid 30s

I am soon approaching 34. The mid 30s!

When you get to this age this is what you realize about relationships;

a) People get over the ‘getting married’ part and have decided to start popping out babies instead.

b) Those that got married early and have realized it was the wrong thing are now single and horny. of course those that have never been married and are single are even horny-er!

c) Those that had babies early and have realized that they were trying hard to stay and make it work with their partner for the child’s sake are now separating.

d) Those that are happily living with their partners are starting to feel the pressure of either marriage or babies.

e) There are the rare couples that are married with children going about a normal everyday family life.

Atleast by your mid 30s your relationships should start to make sense. After all we have been doing this for a while but there are those like myself that even though are just happily married you want to hold on to that young, easy going, naive, energetic sort of relationship. Dont get me wrong I do feel that we have this but I feel that people like to burst my bubble by pointing out that I am getting old and should start a family, etc. Argh!

I guess there will always be people that think they know better then you or that they think they KNOW you better then yourself! I am in my mid 30s ppl – f&*k off!! :P
